Sodium Bisulfite Properties:

Being white crystalline solid with a pungent aroma of SO2, Sodium Bisulphite food grade is able to dissolve in water. The solubility is 42g/100ml. And melting point is 150°C. When mixed with water, Sodium Bisulfite 98% releases sulfur dioxide (SO2), a pungent, unpleasant smelling gas that can cause breathing difficulties to people.
Sodium bisulphite uses in food

While the related compound, sodium metabisulfite 97% , is used in almost all commercial wines to prevent oxidation and preserve flavor, sodium bisulfite is sold by some home winemaking suppliers for the same purpose.In fruit canning, sodium bisulfite crystal is used to prevent browning (caused by oxidation) and to kill microbes.

Sodium bisulfite Industrial uses

Sodium bisulphite is a common reducing agent in the chemical industries. In biochemical engineering applications, it is helpful to maintain anaerobic conditions within a reactor.

The rubber industry uses sodium hydrogen sulfite as a coagulative agent. Additionally, the dye industry uses sodium bisulfite as a dechlorination agent and cotton boiling agent for bleached cotton. Further, the leather industry uses sodium bisulfite liquid to make finished leather products more wearable, waterproof and longer lasting. Sodium Bisulfite , or NaHSO3,is a chemical sanitizer, preservative and water dechlorinator. For these applications, sodium bisulfite is interchangeable with another bisulfate i.e, sodium metabisulfite preservative . Sodium bisulfite is available in a granulated form that resembles table salt. Combining sodium bisulfite with water produces sulfur dioxide gas, which kills unwanted microorganisms. Sodium bisulfite also prevents oxidation and as so, acts as a preservative.
