  Properties: pectin is white or yellow or light gray powder, light brown, coarse to fine powder, odourless, taste slimy. 20 times soluble in water, form a milky white sticky and colloidal solution, a weak acid. Pectin heat resistance is strong, hardly soluble in ethanol and other organic solvents.
