Agar is a mixture of agaran (agarose) and agaropectin. Agar is a liner gelling polysaccharide which can be used as thickener, coagulator, emulsifier, stabilizing agent, suspending agent and biochemicalmedium.

Agar can be widely used in meats, baked goods, confections, beverages and other similar food products.

Appereance: Agar is white to pale yellow in color, is either odorless or has a slight characteristic odor, and has a mucilaginous taste. It is insoluble in cold water, but is soluble in boiling water.
