Overview:
The plant proteolytic compound enzyme is a newly developed special compound enzyme for plant protein hydrolysis aiming at hydrolysis protein of soybean, corn, peanut and other vegetable by our company. It is mainly composed by endo-protease and exopeptidase etc. Under certain temperature and PH value, this product can hydrolyze a variety of plant protein to peptone, peptides and amino acids and other substances, reducing the molecular weight of vegetable protein, to improve solubility and to improve the nutritional value and emulsion blistering features to expand the application of plant proteins range, to overcome the health and safety problem of plant protein hydro-lysates taken by acid method(trichloro-propanol), nutritional loss and poor product quality, and contribute to the development of deep processing of plant protein as the world's second largest high-quality protein sources and raise the level of soy sauce production.
Enzymatic principle:
70% of the plant protein in legumes is composed by the 7S and 11S, 80% of the protein molecular weight is above 100,000, most of the molecular internal structure is complex. The plant proteolytic compound enzyme has two steps of the enzymatic hydrolysis process.
1, pre-treatment: after high temperature and high pressure processing and handling biological enzyme, some secondary keys of the stable structure in the protein are destroyed, thus breaking the ordered structure of the proteins, making plant proteins molecular structure becomes more loose while some of the molecules within the non-polarity genes originally exposed on the surface of the molecules, becoming beneficial for the role of proteolytic enzymes.
2, Enzymatic hydrolysis: under the role of the enzyme in the plant proteolytic enzyme composite, cut off the plant proteins 7S and 11S macromolecular peptide chains within the peptide bond to generate lower molecular weight intermediates of peptone and peptides, and then hydrolysis into low molecular weight small peptides and biological activity of amino acids and other substances one by one from the peptides' free carboxyl end and amino end by exopeptidase.
